Breakfast, lunch and dinner

I absolutely love our shift to a whole food, plant based way of eating.  I figured it would be a phase, maybe a year long, and then we’d transition back to meat.  Well I’m happy to report that neither of us miss the meat (sorry bacon), and really enjoy the health benefits.  I wouldn’t have made the switch on my own and would have missed out on all this good food.  So a big thank you to my fabulous wife.  Thank you for daring to try new things.  Thank you for going out of your way to find recipes with normal ingredients and wonderful flavors.  Most of all, thank you for all the time you invest in me and the kids.  We would be lost without you.  Now it’s time to go shopping and bravely try something new.
